Without alcohol, our extracts would only include water-soluble compounds, missing out on the full range of benefits mushrooms can provide. One serving of extract contains 0.6 ml of alcohol, equivalent to 0.4 g of alcohol, which is only 4% of a standard drink—an amount too small to have any intoxicating effects.
